Sunny Paris Salmon is one of our absolute favorite meals. It is so quick and easy that it’s a frequent week night meal, but it’s also fancy enough for guests.
Salmon is definitely one of my freezer staples. There are so many ways to prepare it, but this version has been our favorite for a while now. It takes all of 5 minutes to put together and only uses 4 ingredients, earning it a spot in the weekly rotation on the regular.
The key ingredient in this dish is Penzey’s Sunny Paris seasoning. I love their spice blends and we are fortunate to live close to an actual Penzey’s store. I could spend all day in there and Sunny Paris is one I stock up on when I visit. If you’re like me it’s easy to drop some serious bucks on spices, but this is one I feel is worth the price. I get the big jar.
The topping for this salmon is just mayo, parmesan and the seasoning. Sunny Paris is salt-free but the parmesan adds plenty of salty flavor, so I don’t think it’s necessary to season the salmon first. Mix the topping together and spread it over the fish. Bake at 400 degrees for 20 minutes (or until cooked through, depending on the thickness of your fillets). Done and done, with dinner on the table in less than 30 minutes.
Salmon is a fattier fish and pretty filling, so I generally just serve this with a side of roasted veggies. One serving of this salmon comes out to 8 WW SmartPoints and 0 net carbs.
24 oz salmon fillet (4-6 oz pieces, raw, skin on)
3 tablespoons mayonnaise
3 tablespoons grated parmesan cheese
2 tablespoons Penzey's Sunny Paris Seasoning
Preheat the oven to 400 degrees.
Spray a baking sheet with olive oil or line with parchment.
In a small bowl mix the mayonnaise, parmesan cheese and Sunny Paris seasoning.
Place the salmon fillets on the baking sheet and top with the cheese mixture.
Bake for 20 minutes or until salmon is cooked through.
